Department: FDSC | Rice Processing Research Department’s Website: Summary of Job Duties: The Department of Food Science at the University of Arkansas Agricultural Experiment Station seeks one post-doctoral associate to work in the rice processing program under the supervision of Dr. Griffiths Atungulu. The selected applicant will work on engineering methods for rice processing with an emphasis on optimizing post-harvest rice drying and milling operations. The applicant is expected to develop methods for assessing key physical and chemical attributes of different rice cultivars and generate information that supports understanding of how these attributes affect rice behavior during post-harvest operations, such as drying, milling, and end-use processing. Responsibilities: Conduct research in the rice quality lab to optimize rice drying, milling, and milled rice quality for specific end-use functionality. Train undergraduate and graduate students on methods for rice quality analyses. Develop scholarly activity at scientific conferences and publications in peer-reviewed journals. Maintain laboratory, record-keeping, and laboratory equipment. Qualifications: This position requires a PhD degree in agricultural engineering (with food engineering focus), food science, or a closely related field with demonstrated experience in research in the area of grain/rice processing.
